I’ve made this salad a zillion times because it’s really something special. (It better be; it’s $18 at the restaurant.) With its tangy, oregano-y dressing, it tastes like an Italian sub sandwich in a bowl.
After having crazy week after crazy week to the point where “crazy week” was becoming the norm (call it “activity creep”) — and because I have a kid starting high school next year (wha?) — I have resolved take back our family meals.
This morning I drove my son and some of his classmates to deliver holiday meals to less fortunate families. The folks who opened their doors for us were so thankful for a turkey and a box of Stove Top stuffing.
Throw this soup together in the late afternoon while you’re kids are doing homework and then eat whenever you’re ready. It will be there waiting (just getting better and better, actually).
Who doesn’t need more (kid-friendly) ways to cook zucchini, right?
